Buy 2 dozen freshly shucked oysters on the half shell. Leave 6 natural, and use 6 for each of the following 3 toppings.
Lime, Wasabi and Green Apple Recipe
- Juice from half a lime
- ½ green apple, finely diced
- ¼ tsp wasabi paste. or to taste
- 5cm chives, finely sliced
- Combine all ingredients and spoon onto oysters to serve
Soy and Ginger
- 1 tbsp soy sauce
- 2 tbsp mirin seasoning
- ¼ tsp sesame oil
- 1 tbsp ginger pickling liquid
- 1 tbsp pink pickled ginger
- Combine all liquids and spoon onto oysters
- Tear ginger into fine strips and arrange on oysters to serve
Aioli and Finger Lime
- 2 finger limes, or substitute ½ lime with flesh finely chopped
- Aioli
- Dollop a little aioli on the corner of each oyster then squeeze a little ‘lime caviar’ from the finger lime on top to serve
