BCF Crabbing with Andrew Mirosch

Andrew picks up some Rogue 4 crab pots from BCF and catches Sandcrabs in Moreton Bay. He then cooks them up in a pasta dish.


Moreton Bay Sand crab spaghetti with chilli, garlic & herbs
4 Serves
Juice of 1 lemon
400gm cooked spaghetti
4 sand crabs meat removed
1 Red chilli seeds removed & finely sliced
2 cloves of garlic, peeled & crushed
100ml extra virgin olive oil
80gm butter
100ml white wine
3/4cup chopped parsley
2TblSp chopped fresh basil
Sea salt
Black pepper
Chopped cherry tomatoes (optional)
150ml Cream (optional)
2Tblsp capers (optional)
Parmesan cheese (optional)

1: Add 50mls extra virgin olive oil and fry chilli and garlic over low heat
2: Add cooked pasta and toss until warm
3: Add basil, parsley & chopped tomatoes (optional) and cream (optional), season with salt & pepper
4: Add butter, lemon juice, wine and remaining extra virgin olive oil
5: Add crab toss through pasta, divide into 4 bowls and grate over a little parmesan cheese.
