Cooking Up Your Winter Warmers

When the weather gets cold and bleak it’s the perfect time to cook up something hot and steamy, like mussels in a spicy thai broth!

Using sliced coriander roots, red and green chillies, lemongrass and garlic, mash them into a rough paste.  The warmth in this dish is going to come from the chillies.

Fry the paste then add the mussels to the dish and give them a good stir to mix the paste through the mussels.

Throw in some ginger, crushed lime leaves and sliced pineapple, then cover the pot with a lid and wait about 5 minutes until the muscles open and enjoy!
