3 Different Ways to Eat Oysters

Buy 2 dozen freshly shucked oysters on the half shell. Leave 6 natural, and use 6 for each of the following 3 toppings.

Lime, Wasabi and Green Apple Recipe

  • Juice from half a lime
  • ½ green apple, finely diced
  • ¼ tsp wasabi paste. or to taste
  • 5cm chives, finely sliced
  • Combine all ingredients and spoon onto oysters to serve

Soy and Ginger

  • 1 tbsp soy sauce
  • 2 tbsp mirin seasoning
  • ¼ tsp sesame oil
  • 1 tbsp ginger pickling liquid
  • 1 tbsp pink pickled ginger
  • Combine all liquids and spoon onto oysters
  • Tear ginger into fine strips and arrange on oysters to serve

Aioli and Finger Lime

  • 2 finger limes, or substitute ½ lime with flesh finely chopped
  • Aioli
  • Dollop a little aioli on the corner of each oyster then squeeze a little ‘lime caviar’ from the finger lime on top to serve
