Char Grilled Parrot Fish

Char Grilled Parrot Fish – Serves 3-4

1 Whole 800-1000g parrot fish scaled and gutted

100ml olive oil

Salt and pepper

100g butter

1tsp crushed garlic

Juice of 1 lemon

1 tin diced tomatoes   Annalisa Brand (with basil) is good

2tbs capers

½ cup sliced shallots

½ cup coriander

½ cup chopped parsley

1.     Heat char grill till smoking

2.     Brush fish with olive oil and season with salt and pepper. Grill approx. 8 minutes per side.

3.     Leaving fish in the pan, reduce heat and add butter, garlic, lemon juice, tomatoes, capers, shallots coriander, and parsley. Simmer for 2 – 3 minutes.

4.     Serve fish with pan juices.

**Recipe also suitable for whole bream, whiting, flathead, tailor etc**
