1 MINUTE MAYO
- 1 EGG + 1 EGG YOLK
- 2 TSP LEMON JUICE
- 1 CUP LIGHT OLIVE OIL
To make the mayo, use a stick bender and a cylindrical beaker or jar.
Add whole egg and egg yolk to the blending jug, then lemon juice, and lastly oil.
Lower blender to the bottom of beaker and blend while gradually raising the blender until the mixture is thick and creamy. Easy as!
FLAVOURED MAYO IDEAS
TARTARE: Roughly chop 2 dill pickles, 1 tbsp baby capers, 1 small spring onion stalk and a small sprig of parsley or dill. Mix through.
AIOLI: Grate 1-2 cloves of garlic and add with lemon juice. WASABI: add 1-2 tsp of wasabi paste with lemon juice.
CITRUS: add 1 tsp each of finely grated lemon and orange/mandarin zest.
SOY AND LIME: stir 1 tsp finely grated lime zest and 2 tsp dark soy sauce into finished mayo.
SIRACHA CHILLI: stir 2-4 tsp siracha chilli sauce into finished mayo.
MUSTARD: Stir 1-2 tsp each of hot English and seeded mustards into finished mayo.
SEAFOOD COCKTAIL: Use tomato sauce and Worcestershire sauce to flavour mayo to taste.
BLUE CHEESE: crumble 100gr sharp blue cheese into finished mayo.
