Stuffed Pumpkin
Stuffing Sauce
Beef mince
Curry Powder 1 Onion chopped Garlic (fresh or tube)
Chilli flakes
Oyster sauce
1 tin chopped tomato
2 tablespoons Honey
Pumpkin
1 large Pumpkin
Foil for wrapping
Method
1. Preheat pan
2. Roughly chop onion and place into heated pan
3. Add in curry powder and a generous squeeze of garlic paste and mix together
4. Sprinkle chilli flakes into the onion mix
5. Stir in mince and leave to brown
6. Add in a good amount of oyster sauce and mix all ingredients together
7. Combine tin of tomato with meat mixture
8. For a touch of sweetness add in two tablespoons of honey
9. Cut the top off the pumpkin and carve out the middle removing seeds, fill the pumpkin with mince mix, add the top back onto the pumpkin and wrap in alfoil
10. Place foil wrapped stuffed pumpkin on coal bed and shovel some coals on top.
11. Medium size pumpkin cook for 40 minutes
12. Remove alfoil, carefully take the top off and enjoy straight from the pumpkin
