Fish Tacos – Serves 4
400g local cod fillet diced
1 soft taco kit (including seasoning) Taste of Mexico brand is good
1/3 cup plain flour
1tsp red chilli paste
Juice of 1 lemon
½ cup mayonnaise
50ml vegetable oil
½ cup sliced shallots
½ cup diced tomato
½ cup grated cheese
1 Spanish onion sliced
¼ cup sour cream
1 avocado diced
½ cup fresh coriander leaves
- Combine mayonnaise, chilli paste and lemon juice. Mix well and set aside.
- Combine taco seasoning and flour in a bowl. Add cod and coat well.
- Heat oil in a pan and fry cod until just cooked through. Keep warm.
- Char grill soft tacos.
- Spoon cooked cod onto warm tacos. Add shallots, tomato, cheese, Spanish onion, sour cream and avocado.
- Roll tacos and serve topped with chilli mayonnaise and coriander leaves.
