How to make Mexican-style Chorizo and Eggs

This is an awesome dish for those mornings when you need something to fill the belly with enough energy to get you through a big day. It’s perfect for one or for the whole tribe.

Note: the ingredient quantity below is perfect for one to two depending on your appetite.

Ingredients:

  • 2 eggs
  • 1/2 a chorizo sausage skin off
  • 4 cherry tomatoes
  • 1/4 red onion
  • 1/2 avo
  • 1 tbl spn sour cream
  • 2 flour tortillas
  • 1 clove garlic
  • 1 tbl spn olive oil
  • salt + pepper to taste

Method:

Heat skillet. While skillet is heating take your chorizo, remove the skin and crumble into small chunks. Then prep your tomatoes, onion and avo.

Once skillet is heated add in your smashed garlic clove, olive oil and chorizo, cooked for a few minutes then add in the red onion and cherry toms.

Once all your ingredients are looking slightly golden and the chorizo has released its oils, crack your eggs straight on top and return to the heat until the eggs are cooked for your liking.

Tip: if you have them runny, it adds to the sauce at the end of the dish.

Once ready, set aside to cool while you toast your tortillas. Theses can be done on the floor of your pizza oven, on a hot plate over the fire, in the oven or on a pan. They should only need 20 – 30 seconds a side.

Dish is ready to serve!
