Pea Puree with Feta and Mint
Ingredients:
- 2 cups of frozen peas
- 1 tbsp olive oil
- 40 frams of feta cheese
- A couple of sprigs of fresh mint
Method:
- Simmer peas for 5 mins until soft
- Drain and puree with olive oil and plenty of freshly ground black pepper
- Crumble over feta cheese and scatter with mint leaves
