– 4 Cloves of Garlic
– 300g Spaghetti
– 1 Whole Red Chilli (adjust according to your spice preference)
– Handful of Flat-leaf Parsley, chopped
– 1/2 cup Olive Oil
– Salt and Pepper to taste
– Parmigiano Reggiano, grated (for serving)
– White Wine (Optional, for deglazing)
Method:
- Confit Garlic:
– Place the olive oil and garlic cloves in a small pot. Cook over low heat for about 1 hour until the garlic becomes soft and cooked through.
– Remove the garlic from the oil and set it aside. You can store the remaining garlic-infused oil for future use, as it adds wonderful flavor to various dishes.
- Cook the Spaghetti:
– Bring a large pot of salted water to a boil. Add the spaghetti and cook for about 11 minutes or until al dente (follow the package instructions).
– Once cooked, drain the spaghetti, but remember to reserve a splash of the pasta water for the sauce.
- Prepare the Sauce:
– In a large saucepan, add three tablespoons of the garlic-infused olive oil. Crush the confit garlic and finely chop the red chili. Add them to the saucepan.
– Cook the garlic and chili in the oil over medium heat until aromatic. If using, deglaze the pan with a splash of white wine, and let it reduce until the pan is almost dry.
- Add the Sand Crab Meat:
– Gently fold in the cooked sand crab meat into the sauce, allowing it to heat through.
– Season the sauce with salt and pepper to taste, and add the chopped parsley for freshness.
- Combine the Spaghetti and Sauce:
– Add the cooked spaghetti into the saucepan with the crab mixture.
– Toss everything together until the spaghetti is evenly coated with the sauce and the crab meat is well-distributed.
- Serve:
– Divide the Sand Crab Spaghetti among serving plates.
– Garnish with grated Parmigiano Reggiano on top.
– Optionally, drizzle a little more of the garlic-infused olive oil over each plate before serving.
