Chilli Mudcrab Spaghetti

For those of you out there who may think cooking seafood is a little bit too hard, it’s not at all! This recipe is bound the knock the socks off whoever you serve it to!

Ingredients:

2 Mudcrabs

5 cloves garlic

Red and green chilli

1 Zucchini

2 lemons zested

Spaghetti pasta

Olive oil

 

Method:

  1. Start with the mudcrab – Take the claw off the mudcrab first and get as much meat out of the knuckle as possible. Move onto the body and start with the swimmer then move to the claws and use the back of a or a kitchen mallet to whack until the claw cracks (don’t bang too hard!)

 

  1. Roughly chop the garlic then sprinkle sea salt over it and mash until slightly mushy.

 

  1. Roughly chop chilli. (if you want less heat, use green chilli’s)

 

  1. Julienne zucchini

 

  1. Zest 2 lemons

 

  1. Bring 4 litres of water to the boil with half a cup of salt. Once boiling, add spaghetti

 

  1. Over medium to high heat, add 4 tablespoons of olive oil to a frying pan. Add garlic, chillis and let simmer.

 

  1. Once pasta is cooked, add to frying pan with zucchini. Add a generous squeeze of lemon juice.

 

  1. Take fry pan off heat and gently fold through mud crab meat

 

Serve and enjoy!
