Cooking Lamb Shanks using ARB Earth Camper

Lamb Shanks served with Mash Potato and Broccolini

Serves Four

For this recipe, we prepped and browned everything off using the gas stove in the Earth Camper, then transferred the pot onto an open fire for 2-3 hours.

Ingredients:

  • 4 x large lamb shanks
  • 1-2 litres of beef stock
  • 3-4 carrots
  • Peeled garlic
  • 2-3 brown onions
  • 2 x tins of crushed tomato
  • Tomato paste
  • Red wine
  • Broccolini
  • Potatoes

Method:

  • Brown off lamb shanks in pot and set aside
  • Dice onions, carrots and garlic – then brown off in same pot with rosemary
  • Add beef stock, tomato paste and red wine to veges in same pot. Allow to simmer
  • Add lamb shanks to pot – then lid on and transfer to coals (tip: we started our fire 2-3 hours beforehand to produce the perfect heat and coals)
  • Allow pot to sit on coals for 2-3 hours before serving lamb shanks with mash potato and a side of broccolini
